What is Sodium tartrate?
Toxicity
Abdominal cramps, nausea, and vomiting .
Oral LD50 in rats is 4360 mg kg-1 .
Description
Sodium tartrate Na2C4H4O6) is used as an emulsifier and a binding agent in food products such as jellies, margarine, and sausage casings. As a food additive, it is known by the E number E335.
Because its crystal structure captures a very precise amount of water, it is also a common primary standard for Karl Fischer titration, a common technique to assay water content.
Chemical properties
White crystals or granules. Soluble in water; insoluble in alcohol.
The Uses of Sodium tartrate
Sodium Tartrate is a sequestrant and stabilizer that is the disodium salt of l(+)—tartaric acid. it is soluble in water. it functions as a sequestrant and stabilizer in meat products and sausage casings. it is also termed disodium tartrate.
The Uses of Sodium tartrate
Reagent, food additive, as sequestrant and sta- bilizer.
The Uses of Sodium tartrate
Sodium L-(+)-Tartrate is a food additive, use as an emulsifier and binding agent in food products.
Indications
It acts as an emulsifier and pH control agent in food products , . In the laboratory, it is used while performing the Karl Fischer equation, which is used to determine the water content of various substances , .
Background
Sodium tartrate is a disodium salt of l-( + )-tartaric acid that is identified by transparent, colorless, and odorless crystals. It is obtained as a byproduct of wine manufacturing. Sodium tartrate is generally recognized as safe (GRAS) as a direct human food ingredient. It acts as an emulsifier and pH control agent in food products .
This compound is commonly used as an emulsifier in cheese/cheese spread products and is not to exceed 4% concentration, according to Health Canada regulations .
