White to pale yellow powder. Very sweet. Soluble in water, soluble in dilute ethanol, glycerol, propylene glycol, insoluble in absolute ethanol, ether, chloroform and oil.

Disodium glycyrrhizate is refined from glycyrrhizin and sodium alkali after partial neutralization.
