What is 2-METHYLTHIO-3,5-METHYLPYRAZINE?

Description

2-Methyl-(3 or 5 or 6)-(methylthio)pyrazine (mixture of isomers) is like roasted almonds, hazelnuts. This may be prepared from 2-methylchloropyrazine; a mixture of 2-methyl-3-methylthiopyrazine, 2-methyl-5-methylthiopyrazine, and 2-methyl-6-methylthiopyrazine is obtained.

Chemical properties

2-Methyl-3(or 5 or 6)-methylthiopyrazine has a roasted almond, hazelnut and vegetable aroma.

Preparation

From 2-methylchloropyrazine; a mixture of 2-methyl-3-methylthiopyrazine, 2-methyl-5-methylthiopyrazine, and 2-methyl-6-methylthiopyrazine is obtained.

Aroma threshold values

Detection: 4 to 60 ppb. Aroma characteristics at 1.0%: toasted popcorn, roasted almond, hazelnut, peanut and cashewnutty, with a caramellic and corn-chip nuance.

Taste threshold values

Taste characteristics at 3 to 10 ppm: nutty, roasted and earthy with coffee and corn nuances, peanut and pecan nutty, popcorn and corn chip–like with a burnt musty nuance.
