The Uses of (-)-CARVEOL

(-)-CARVEOL finds use in flavor compositions to support the flavor of Mint. Spearmint, Caraway or spice flavors or flavor blends. The concentration in finished product will be about 25 ppm. (Candy).

Production Methods

(-)-CARVEOL can be produced from: 1) Limoncne by oxidation. 2) laero-Carvone by reduction with Lithium Aiuminium hydride.
