What is PULLULANASE?

The Uses of PULLULANASE

Pullulanase is a glucanase that degrades pullulan. It is produced by the Gram-negative bacterium Klebsiella and is used for starch-debranching as well as to study polysaccharide utilization.

The Uses of PULLULANASE

One unit will liberate 1.0 μmole of maltotriose (measured as glucose) from pullulan per min at pH 5.0 at 25°C.

Biochem/physiol Actions

Type I pullulanases specifically hydrolyse α-1,6 linkages, while type II pullulanases are also able to hydrolyse α-1,4 linkages.
