The Uses of Modified Starch
Modified Starch is the product resulting from the treatment of starch with certain chemicals to modify the physical characteristics of the native starch. It is used in desserts, pie fillings, sauces, gravies, and fabricated foods as a thickener, binder, and stabilizer. It is also termed modified food starch.
