Density 1.052-1.070 at 20/20 °C (Cassia oil); 1.037-1.053 at 20/20 °C (Cinnamon leaf oil); 1.010-1.030 at 25/25 °C (Cinnamon bark oil)
Stability/Shelf Life DARKENS & THICKENS ON EXPOSURE TO AIR
Decomposition When heated to decomposition it emits acrid smoke and irritating fumes.
Refractive Index Optical rotation: -2.5 to +2 at 20 °C (Cinnamon leaf oil); -2 to 0 at 20 °C (Cinnamon bark oil). Index of refraction: 1.6 to 1.5910 at 25 °C (Cassia oil); 1.53 to 1.54 at 20 °C (Cinnamon leaf oil); 1.5730 to 1.5910 at 25 °C (Cinnamon bark oil)
Other Experimental Properties Cinnamon bark oil contains as its major component cinnamaldehyde (usually 60-75%); other constituents include eugenol, eugenol acetate, cinnamyl acetate, cinnamyl alcohol, methyl eugenol, benzaldehyde, cuminaldehyde, benzyl benzoate, linalool, monoterpene hydrocarbons (e.g., pinene, phellandrene, and cymene), carophyllene, safrole ... Cinnamon leaf oil contains high concentrations of eugenol (Ceylon type 80-88%; Seychelles type 87-96%); it also contains many of the major constituents present in cinnamon bark oil (e.g., cinnamaldehyde, cinnamyl acetate, eugenol acetate, and benzaldehyde) as well as other minor compounds, including humulene, isocaryophyllene, alpha-ylangene, coniferaldehyde, methyl cinnamate, and ethyl cinnamate. A cinnamon leaf oil of Chinese origin ... is reported to contain only about 3% eugenol but with a high content (ca. 60%) of safrole.
