Mustard is a flavorant made from the dried, ripe seed of several closely related genera, species, and varieties of the family cruciferae; the seed of a plant of the cabbage family. it is used as a flavorant in baked goods, sauces, and salad dressings. it also functions as an emulsifier in salad dressings. the ground seed is used for spices.
