Cellulase is the enzyme complex used to degrade cellulose since it hydrolyzes cellulose to oligosaccharides and finally glucose. It contains at least three different components, endoglucanase (EC 3.2.1.4), cellobiohydrolase (EC 3.2.1.91) and β -glucosidase (EC 3.2.1.21), and is produced by many microorganisms including Aspergillus, Fusarium and Trichoderma.
